Can I use this as a protective layer on a wooden children (18 months) pickler triangle/slide? Would it be in any way slippy for her to slide down?

Shellac is only suitable for indoor projects. With that said once cured it should not be too slippery.

Would this be suitable to seal an unfinished wood coaster? Birch wood.

I used it for wooden coasters made from other hardwoods recently. Worked well and has a good look to it.

Can this be used on wood floors?

Shellac is not a good finish for surfaces that are exposed to water or subject to heavy wear. There are much better choices for wood floors.
