I was pleasantly surprised to find that it works and tastes better than coconut flour. If you don't mind the dark brown color, you'll find that it's a superior flour. Personally, I think it's the best of all the alternatives for taste, cohesion (especially if you use xantham and/or guar gum for binders) and digestibility. I made some noodles with it. While I need to tweak the recipe for taste, I found that they did not fall apart in the boiling water.
