Drain tomatoes to another pot, keep the tomato water. Tomatoes into the mill, med disk, crank away, be sure to scrape the good stuff from the bottom of the mill. Your left with lots of tomato skin up top and goodness in the pot. Screen the tomato water to remove the seeds, add it to your milled tomato sauce. Add your spices to the mix, reduce over low heat.
