Are these right or left handed? Any left hander knows they CAN’T be both, and there are no options to choose left.

The scissor are both Right and Left handed. You will notice the have “finger grips” on the top of both the finger holes, this makes them able to be flipped for either hand usage.

What is the round metal circle for?

I believe it tightens and loosens the small bolt that joins the two blades for scissor tension tightening.

Can these be sharpened?

I believe that is why the round metal disc is available, to loosen and tighten the scissor blades for sharpening. It seems to work like a round screwdriver for different size bolts.
