This is the best knife, particularly for the money. It is lightweight, balanced, always sharp, 5 inch size perfect for most chef knife tasks. I can't believe it was so inexpensive. At first I had trouble taking it out of the case but now its very easy, either the case got wider or I got smarter. I left it out wet for a couple of hours once because I forgot and it did not rust but otherwise I dry it which is the only thing I'm not happy with but still, its worth it, a very good knife would buy it again.

I got this knife because I wanted to have good clearance between the board and my knuckles when cutting, and the width of this blade is perfect for me in this regard. This knife feels good in the hand, well balanced. I have not had to sharpen it yet, since it came pretty sharp already. Size is perfect for chopping, slicing, etc. I am not using the self-sharpening shield, but its good to have as an option, I guess. For $20, this knife can't be beat.

Blade quality is good and holds its edge pretty well. I like the self sharpener case which helps keep the edge but you probably will want to sharpen it on another sharpener every once in a while. Doesnt rust or hold stains on blade. I got this for me and my wife but she finds the handle too big and not at a good angle for her wrist, finding it hard to get a good grip without fatigue. Overall a good self sharpening knife that is perfect when you dont want to use or need a larger kitchen knife. I would buy again for me. If you have wrist issues or small hand be mindful.

What a great knife. I love it. Easy to use, perfect size, the edgekeeper keeps it nice and sharp whenever I go to use it. Edited 3/9/2022: I still have this knife and it's STILL amazing. I haven't bought any more knives cause of living situations but this is by a country mile the sharpest knife in our kitchen. Loses its edge every now and again, like monthly or biweekly if used often, but I just run it thru the sharpener and it's good as new. Maybe one day I'll get some nicer knives and a real sharpener, but until then I trust this lil dude with all my cutting and chopping!

I've only had this knife for a short time and it is already my favorite knife. There self-sharpening sheath ensures a controlled slice every time. The knife is just the right size for most slicing needs and offers a well-balanced feel. I was able to mince an onion with absolutely no tears. The knife is very well-constructed. The blade is thick enough to be strong but not so much as to give the knife an unbalanced feel or make it overly heavy. The handle feels right without it feeling too small or big as to compromise control. The blade extends into the handle so I'm sure I'll never have to worry about it coming off. The blade has divots in it to prevent food from sticking to the blade although occasionally it does depending on what you're slicing. I wholeheartedly recommend purchasing this knife. In fact, I'm looking at a set of knives the manufacturer is offering and considering purchasing it also.

My son is taking a cooking class at his school and needs his own knife. I’m not about to send my wustof knives in so I thought this was a cheap alternative. It will NOT sharpen. I can’t cut through a tomato’s skin without putting pressure on the tomato. If it had a good edge it would slice right through as I draw the knife across the skin. It’s going back immediately.

Bottom line: no matter what, this does not stay sharp. I bought it 2 years ago, stopped using it after one, should have reviewed it then. It feels good, works well when sharp, but ... it even comes with a sharpening blade cover that sharpens it every time you put in or out (maybe they know it needs help) but it doesn't help. I've used a professional level sharpening device on it, as well as several other knives I use...the others keep an edge for a reasonable time not this Sabatier. Very disappointed, it was a good price and reputation and reviews and nicely weighted and designed. Too bad, it just sits in a drawer now. Thanks

Bought a second one same day I received and used this one ... This is a well-designed, well balanced, very well finished/manufactured, very sharp knife. It is not dishwasher safe therefore you will have to handwash it (like all good kitchen knives), otherwise the blade will definitely stain. Not a specific problem with this knife, really caused by dishwasher detergents and their chemical ingredients reacting with the type of steel used in this knife and other good kitchen knives. I highly recommend this - it's a no brainer for a 5" must have in the kitchen knife for anyone that cooks often.

Muy buen balance, muy buenos materiales y fàcil de afilar

Achei os R$77 que paguei estão valendo, se for o preço normal, já não tenho certeza se vale tanto. É bem bom, não achei pequeno, depois um tempo fica ruim e preciso pegar uma afinador melhor para afinar, essa ideia de capa com afinador é bom mas não afina tão bem.

Lâmina de aço inteiriça da ponta ao fim do cabo, muito robusta e equilibrada. Ótima pegada. Achei muito interessante a bainha com um processo de afiação automática ao inserir/retirar a lâmina. Excelente custo/benefício.
