I could eat it all day! A suggestion for the seller and/or manufacturer: the jars need to be sealed on the inside, beneath the cover. One of them opened slightly and the entire package was one huge oily mess that I had to clean up. I don't think the product spoiled, which is good, but also perhaps lucky. I suggest that this is a fix that is urgently needed. In addition, I think tahini should be refrigerated after opening, so I was lucky it's not summer, so mine hadn't spoiled. It's easy to stir - tahini that I've been using is hard on the bottom and oily on the top. This one is easy to use starting with the first batch. It's also got a better flavor than any other tahini that I've tried. Some people say they can eat it straight - not me, but the bitterness is much less pronounced, and when prepared, it's dreamy.Note - watch the prices - it's a better deal when shipped from Shirley Bar directly versus a retailer. It is so creamy and has such great flavor that you want to eat it out of the jar. I was worried that since it was more runny that it wouldn't hold up in dressings and would require you to use more to get the same thickness that I was accustomed to with other tahini. Not so. When you add water or lime or lemon juice, it actually expands the tahini and does not compromise the creaminess.
