This is Great in my pursuit towards making a good mozzarella cheese alternative, the prices of vegan cheese's oddly enough surpasses that of regular cheese's. And the store bought vegan cheese's lack either the texture or the taste or both combined. I have two pizza ovens and have learned to make a great tasting pizza dough and all I need now is the mozzarella cheese.
