Do these work on carpet? All I see listed are different tiled or hardwood floors for what these work on.

They do work on a low pile carpet.

WIll this hold a door open? Want to set door open an inch or 2 for ventilation, but alarm if cat pulls on door to try to go out.

It does stop the door from opening up. There is a switch on the alarm that you can turn on an off. I live mine and have one at every door.
