Bruising is just a step below the effect from crushing it. I did a fair amount of research on garlic a few years ago ..Garlic / allicin (even just peeled not cut) begins to change flavour immediately. if garlic is crushed, the good flavors will quickly be converted into the bitter sulfur compound Diallyl disulfide (DADS or 4,5-dithia-1,7-octadiene) before they reach the taste buds. which is an allergen. People who say they can't stand garlic? are in fact reacting to this allergen.
