I was looking for a prebiotic and a friend mentioned it as an option. ("without going too into it" disclosure: I've been having digestion issues since my second c-section). Okay, back tot he review. I admit, I was a bit skeptical, but decided "hey why not?" I've tried many other prebiotics and none of them were for me. I ordered my first jar and told myself I'd give it a month. So glad I did. Between then and now, I've become a bit obsessed with yacon as a food source. I take 1-2 teaspoons per day and my digestion is improving. I also like how I can eat it plain (rich & pleasant taste), it has a smooth texture, and is super versatile in recipes.
