Does this need to be kept refrigerated?

I did keep it refrigerated because I did not use all of it in my recipe and we were at our cottage up north which did not have air conditioning.

Does this Guanciale need to be trimmed?

I trim the skin off due to its toughness but if you like hard chewy you can leave it on.
