How could sodium citrate be GMO? It's not really an O, as it were.

I came here to say this same thing. I love the idea of using science to make awesome food and stabilize my cheese sauces...but at the same time I despise anti-science and misleading advertising. It'll be a hard pass on this product until they remove their label as "non-gmo".

Trying to recreate Qdoba 3 cheese queso, this was suggested, if I use this, the recipes call for heavy cream, do I use water instead?

You never know unless you try! I personally dont use water in my cheese sauces ever. I use full fat milk, so heavy cream wouldn't be too far off from that. I would stick with the heavy cream or downgrade it to full fat milk at the most. But water will dilute the creaminess too much for my family's liking.
