This tea is so easy to make--somehow I was intimidated by the tea ceremony aspect of it, but it's quite simple and the tools are efficient and pretty. The key to getting the taste right--grassy rather than bitter--is not to use heaping scoops but scant ones, and to make sure the water isn't hot. A termperature-controlled kettle is perfect (175 degrees), but you can also microwave for 40 seconds or pour the water back and forth to cool it. I love the feeling this tea gives me: alert and focused without the physical buzz of most caffeine. Great for creative work or midday concentration.
