Olive oil has one of the highest temperature smoking point, similar to ground nuts. (about 180 centigrades, you do not want to go any higher) It is in fact perfect for frying as lower temperatures will cause your food to go soggy and oily) Some argue that, unlike ground nuts, it has a strong taste but that's a matter of preferences and it would depend on the individual oil. As a rule of thumb any other cooking technique requires lower temperatures and it is not an issue. Isn't it fascinating how many people feel compelled to give answers when they're not informed?

The date stamp on a container we just got is 23 November 2023, so about a year. Hope this helps.
