Then last night I had some kale I had to use up and I grabbed this book to see if there was anything quick I could make, and, that I already had all the ingredients for in my kitchen. I did! It was COOL RANCH KALE SALAD PAGE 124. And guess what? It was good! I mean it was healthy good, not like eating pizza hut, but guess what? I actually felt GOOD after eating it! I eat Pizza Hut and I PAY for it, for hours. I eat plant based already with meals made at home and have for the last almost 10 years. I usually cook with oil and use a lot of nuts for sauces. I still feel pretty good after eating plant-based meals even if I use oil and nuts (cashews mostly). But the world of difference I felt after eating this- I felt so light, so good, and the heartburn, GERD and "hot" stomach with pain/cramps that keeps me up at night was NOWHERE to be seen. Usually, I still feel a LITTLE bit of something, even eating plant based (it must be the amount of oil/nuts I'm guessing?). (I have had over a decade of GI problems that I have been / am being treated for). I bought this book and a couple others to try to help with my health/symptoms. This salad was so satiating, I did not feel I was "missing" my meal. So, I'm really excited to try more of these recipes and see how I feel. So, I tried the crunchy peanut shredded cabbage salad today and it was so YUMMY. Very satisfying. but I had a tiny bit of what I call "hot" stomach. I think I will try it again but with her peanut free substitution with hemp seeds and balsamic and see how it goes. BTW my non vegan husband loved this salad, which is great because it is so hard trying to find meals we will both eat, he's super picky and we both grew up on meat and potatoes, you know it can be hard transitioning from that. I am buying two more copies of this book, one for my mom and one for my friend and I hope you try it. I work in healthcare and see what we do to ourselves with our lifestyles. But I also know how hard it is to feel satisfied eating mostly plants when you have been raised not eating many plants. Over the years I have found quite a few recipes my family and I love that are plant based that are in our regular rotation. I think this book is simple enough, with ingredients most of us can find easily, very nutritious ingredients, and at least 2 of the recipes are satisfying that this is a good book to have in your kitchen. Easy satisfying recipes

Lots of Tasty Foods
First, the go-to balsamic is divine! I have a jar in my fridge right now. Lots of good tasting foods and a wonderful recipe design. You have a pictorial listing of all the ingredients at the top and options everywhere, i.e. make ahead, freeze, etc.... I have enjoyed everything so far. The pictures are well done and the final product looks like the picture. This is a credit to the chef and book designer. It is a must in any vegan library.

This is where I wish I would have started on my plant based diet journey instead of aimlessly searching Pinterest for 7 months! I wasted so much time on meals that took hours to prepare and many still wound up being duds. I came across Plant You in my searches though so it eventually lead me here after trying great recipes from her social pages. The introduction of this cook book is chock full of useful information, and every recipe Iโve made has been easy to execute, and used realistic ingredients I can get at any major grocery chain. Everything so far has been delicious. I also love having the big images of meals as itโs helped me make meal plans each week, and made it enticing to try new dishes.

PlantYou cookbook
Oh boy oh boy! I have to admit I am not a vegetarian, but consider myself a meat minimalist. I want to do better for my body and the earth. So I am trying to do less and less meat and more plant based foods overall. I will admit to collecting cookbooks. I purchased this hardcover and I am 110% love it. I use cookbooks to learn new methods, new ideas and to inspire myself. This cookbook is one of THE best cookbooks I've purchased in years. Great recipes. Great ideas. And LOADED with pictures!! The recipes are not hard and really creative. Everything is laid out over the picture about ingredients - pictures of the ingredients even! breakfast options, soups, sandwiches and salads, main dishes, sauces, sides and desserts - plus nutritional info. Nothing is missing and there is something for every taste. It's amazingly well put together, so well thought out. Exactly how I would put a cookbook together if I were ever asked - no joke. Honestly, in my opinion, if you're to go more to or are already there, this IS the cookbook for you. The only thing I would say is that I wish the binding was spiral backed - usually a deal breaker for me. But I am SOOOO glad I threw all in and purchased anyway! LOVE LOVE LOVE it

Very Well Written, Lovely Photos - But Bland for Our Tastebuds
This book has a lot of pros to it - passion from the author about the topic, lovely photos, and way to read ingredient lists with photos, simple directions, very comprehensive categories of recipes from overnight oats to dressings to desserts, etc. The only problem for me is that unfortunately the flavors of the recipes are not resonating with me or my family. I understand this might just be my taste buds. I have made 4 recipes so far (salad, noodles, dressing, overnight oats) and aside from the overnight oats the other 3 just were not edible for us as made. I had to add a ton of seasonings to everything for the food to have to be flavorful enough for my family. I understand this may be us and that we like heavily seasoned food. For context I have been eating primarily plant based on and off for about 2 decades so I am not new to plant based eating. It could be that these recipes are oil free which we have never included as a focus for us so the recipes might just be missing that oil flavor to our taste buds.

Best Healthy Recipes That the WHOLE Family Will Love, Hands Down!
I can't say enough about this cookbook. This is now the new staple in my kitchen. I have Celiac, so I have to eat gluten-free. I am a very conscientious eater, but I struggle with chronic illness. My teenage daughter has autism and is very picky about what she will eat. She does not have the best diet and has gained weight due to her texture issues and medication. My husband and teenage son don't mind eating healthy but love their meat and dairy products. My husband is ready to lose about 20 lbs. He also wants to boost his metabolism and get his hormone levels back into balance. So, all of this considered, my husband and I decided to eat a largely plant-based diet to get our family's health back on track, and this cookbook has been our guide. After 6 weeks, we all feel so much better, and my husband is very proud that he has been able to go down two notches in his belt already! Why Should You Buy This Cookbook? (1) The recipes are incredibly delicious! We have only found two recipes that we were not wild about, and we've cooked through a large portion of the cookbook! (2) The ENTIRE FAMILY eats from this cookbook. Even my daughter with autism, who is SO picky, loves the recipes. When she ate the vegan lasagna and asked for seconds, I about fell out of my chair! (3) You will know most (if not all) the ingredients! Rarely will you come across an ingredient you don't already know, and even if you don't, you'll find that everything is easy to find at your local grocery store. No need for expensive specialty stores! (You will also be exposed to some great substitutions that are readily available and that you wish you had known about all along.) (4) Not only are the recipes plant-based, but they are all OIL-FREE and REFINED SUGAR-FREE as well, which is just incredible. She also gives quick tips on easy substitutions if you have a nut allergy or are gluten-free like me. (5) She has an entire section of sauces with 23 recipes, and they are all astoundingly good and can be added to so many other recipes to add intense flavor without the unhealthy ingredients. (6) She has an entire dessert section as well! The Peach Crumble and Chickpea Cookie Dough are out-of-this-world. Overall, I can tell that she put a lot of thought into this cookbook. She went to incredible lengths to prove that plant-based, oil-free, gluten-free eating CAN be incredibly tasty. My husband and son are constantly amazed at how the healthier versions of recipes actually taste BETTER (ie. My teenage son told me the bean burgers were actually tastier than beef.) This is a cookbook you will bring out every week, if not every day (like our family). It is so well-worth your money.

Easy to navigate...
I have had this book for about 1 month. I have made several recipes in it. I am not vegan but wanted to have a more plant based diet. It was important for me to be able to incorporate some of this in my kids diet too..(11 & 18)......soooo, on saying that, I loved everything l made. The breakfast cookies were a hit with all except my 11 yr old because she didn't like the oatmeal but she is 11!!! They were all delicious. I made them smaller than the 8 the recipie stated it made and I freezed them too so in the am I would take 1-2 with a cup of coffee!! The Indian sauces were delicious but for my fussy kids, I pureed the sauce in my Vitamix and had this with rice... Guilty for throwing in a bit of chicken BUT the kids ate more veggies than otherwise. The lasagna is AMAZING! I did incorporate 1lb beef ( again fussy kids) but honestly they had no idea how much veggies they were eating!!! I also made the vegan risotto and vegan mozzarella.....the only non vegan stuff in the lasagna was the Parmesan cheese and beef......guys, my kids lapped this up! 10 min tacos was a hit also ( they had no idea they were eating mushrooms and walnuts)..... The garden Bolognese was wonderful but again, I would puree the final product to make it a sauce and add a little meat......for my kids! I was absolutely happy with the final product but at least I am able to get my kids to eat more veggies without them even knowing!!!! The rainbow rolls with peanut sauce is yummy and light. I have made many of these and have perfected rolling rice paper in my own way!!! The peanut salad was great too and the stuffed sweet potato.... So I give this the thumbs up! I loved that she had a picture for each product that went into the dish. Every recipe has a picture ( for visual people like me, that is important), easy to read. A lot of thought went into this. I am no foodie but I enjoy cooking at home and I enjoy delicious food. This book did not fail!! Absolutely recommend to those who want to experiment with plant based or just add a little more veggies to their diet or the hard core......well worth it.

By far the best cookbook I've ever purchased...
I've been guilty of purchasing a cookbook with high hopes of experimenting and finding inspiration in the kitchen and then bringing it home to collect dust..... I have cooked 15+ plus things from PlantYou in the last two weeks, every one of them delicious and SO easy. My fave is the cauliflower wings--they are so good, I've convinced 3 non-vegan friends to make them. My first favorite part about this cookbook is how easy it makes meal plan/prep. As someone with ADHD, the visual ingredients list helps me know in an instant what I need to add to my grocery list. Then when the time comes to cook and the ingredients are so simple and minimal, everything comes together so quickly. I never realized how delicious vegan food could be with so few components. My second favorite part is that every single recipe in the book is gluten-friendly. It was so hard for me to be vegetarian and gluten-free given that many meat-substitutes are made with gluten. This book provides suggestions for substitutions, but most recipes are inherently gluten-free because they're made with whole foods and not processed meat-substitutes. Thank you, Carleigh!! P.S. if you don't already follow PlantYou on Instagram and Tik Tok, do it. You won't find many duplicate recipes, and you will LOVE her scrappy cooking series.

Fabulous book for beginners
I bought 2 of these books as Christmas presents but was tempted to keep one for myself even though I've been vegan for 7 years. This book is fantastic for the plant based novice as the recipes are kept simple with not too many ingredients, clear instructions along with lovely illustrations. Also included are nutritional facts which is of great benefit for those just starting out on the plant based journey.

A very special book
I am a life long vegetarian..turned vegan 20 years ago....it was never about me...it was always about the animals In return I have had a life of great health with no weight issues.. Recently I decided to cut right back on oil...and came across this young lady on utube..which led me to her book as I love cooking and creating delicious meals.. I LOVE this book...it's simplicity most of all... I can get great meals on the table in no time and even without oil I know they will be a success At my age I'm not going to give oil up completely as there is no doubt that a little spray now and again will give me crispier roast potatoes or tofu......( I know I'm sad).... If anyone reading this is interested in creating simple plant based healthy meals..then get this book.....you won't be disappointed.
