The effect of gluten in the flour makes flattening the dough very difficult. If you will use corn flour (gluten-free), we can easily make thin tortillas. **Q: Does it have a 1/8" gap when closed?** A: The gap can reach to 1/8", but you may need to try it till you reach to the perfect thickness you need. **Q: Where is the recipe e-book? Says to follow information in manual. I did not get that either!** A: There is a scan code / link to download the ebook, if you didn’t find it in the manual, please contact me. I just bought this press, and it’s great; however the bottom of the box clearly states “Made in China”. The back of the box, and the Amazon description both state, “Designed in Germany” and “meets German engineering standards”.
