Daily use, with oil, improves performance.
I really thought i messed up. All that money for this pan, and eggs stuck! Well it was only the first day. I seasoned it with some canola oil, heated it up and tried it out. I hate flipping eggs on a good day, and this was NOT a good day. Stuck to the bottom, even with small amount of oil. But i really needed a pan, and, like it or not, it was going to get used hard, every day for breakfast, and sometimes dinner, too! Bacon, sausage, fried potatoes, hamburger, steak, and the eggs. I give up, i just help them with a spatula and steam with a little water. Did that even with a nonstick pan. So i guess i couldnt complain. So, as it turned out, all that greasy food has done a good job seasoning the pan, and i can still use the plastic spatulas and not scratch the surface. When im done, deglazing the pan, and wiping it down cleans it up well. Dont use soap, or youre back to square one. I have a few little grease stains on that nice stainless edge, cosmetic, from pouring out excess oil before cooking. Scrambled eggs pull easily off the pan, nothing gets really stuck, like the first day. It pays to use the pan all the time, and this 12in pan just might last longer than the nonstick ones ive gone through every year, and that would be worth the $200. One thing, like if youve cooked up some meat, like bacon, etc. and you plan on putting eggs next in that pan, deglaze the pan with small amount of water to bubble off all that sticky stuff. Then pour in the eggs and they wont stick at all! Daily use for 2 weeks, and it seems like its broken in. I havent tried an omlette in it yet. I may just chicken out and get another nonstick for omlettes. Next im gonna try the titanium pan, see how that works! Meanwhile we will see how long the hexclad lasts. I thoroughly expect this pan to last me years, which is more than i can get out of the average nonstick! I go through one of those a year. And at $50 a pop, its getting old. If this pan, "pans out", i may get the hexclad wok, next! Update, the more i use it, the more nonstick it gets! This pan is a real workhorse! Update, may 29. Im back to using stainless steel spatulas, they work best of all. Not perfectly non stick. I wont try an omlette in this pan, but you cant beat it for everything else! I use a copper scour pad and hot water to clean it, right off the stove. The outside has developed a brown patina from daily use, not affecting performance. Other thing i noticed. I used to just slap bacon strips on a cold pan heating up. Not with this pan you dont! I heat the pan a bump past Medium. When its heated up, now i put down the bacon and it cooks evenly instead of burning in the center of pan. Live and learn, huh? Uploaded this pan, dont know if it made it. This pan works hard! After using stainless turners, the finish is just fine. Youd just about have to take a corner of a stainless turner and gouge the pan, pressing hard! Who does that? Im thinking of getting a pizza steel. Pressing a sharp pizza wheel might be a good test of the hybrid finish! Im thinking of getting that titanium soon just to spread the work.

Literally, the best pans on the market.
I had read so many reviews before deciding to purchase, and I came to one conclusion from so many people writing bad reviews — you all don’t know how to cook! I have cooked fish, seared a steak, cooked scrambled eggs with cheese, poached an egg, fried bacon, made a bourbon reduction sauce with molasses and the consistent result from all these — everything was cooked to perfection and literally slid right out of the pan. I wanted to try these particular pans because for so long I’ve used Lodge cast iron pans. Don’t get me wrong my cast iron pans are amazing but the constant maintenance can be exhausting. The Hexclad pan is being promoted as a hybrid of stainless steel, the durability of cast iron, and completely non-stick. They didn’t disappoint. Plus they’re so much lighter than my cast iron skillets and cleanups are a breeze. Let me give anyone who reads this a few tips: #1 Follow the directions given in the package. #2 Please, put a buffer between what you’re cooking and the pan. I use beef tallow, lard, or ghee. And please whatever you do, stay away from seed oils. Not only are they extremely unhealthy for you but their high heat points can’t cut it like natural fats. #3 Cook on low to medium heat. You won’t be disappointed and you’ll be surprised at how well these pans heat up. #4 When using any stainless steel utensils, don’t dig into the pan or use a fork with the tines down scraping the bottom, or doing the same thing with a knife, or ….. you get the point. See what I did there? Point? And lastly #5 …… refer back to #2 and you won’t go wrong. Watching some of the videos where someone is cooking scrambled eggs without a buffer — what did you think was going to happen!? SMH Happy cooking! Update: I have used this pan for just about everything and I absolutely love it. It has literally became my favorite pan. Cooking is fun once again and the food tastes better. The ergonomics of the pan handle helps as it stays cool. But don’t put your pan in the oven at 500° and then grab it by the handle because your’re itching for a burn you don’t want. This pan is a little heavier than what most of you are use to with your Teflon pans; that’s because they’re made from quality materials. I am disappointed they’re made in China, but they are designed and planned here in the US. So the reason for writing this update is, and as I stated earlier, I really love this pan. So much so I purchased the complete set. Everyone has their own set of pans they love, and all I’m doing is giving you my two cents worth. As of right now 11.21.2024, Hexclad has their Black Friday sale. Check them out as you won’t be disappointed. Happy cooking!

Excellent Nonstick Pan That Cooks Evenly!
I’ve been very happy with this frying pan. It heats evenly, the nonstick surface makes cooking and cleanup much easier, and the included lid is a great bonus. I’ve used it for everything from eggs to chicken, and food releases easily without sticking. The stay-cool handle is comfortable to hold, and I like that it’s dishwasher and oven safe. It’s become one of my favorite pans, and I would definitely recommend it to anyone looking for a high-quality everyday skillet.

Worth it!!
I nearly cry every time I use this 10" Hexclad frying pan because it is so amazing! I can do anything in it! At 74 I have plowed through so many "non-stick" pans over the years, only to have them stick, peel, chip, et. This pan is absolutely exceptional, beautiful and worth the very pricy cost. I have fried things in it, done pancakes with no oil, baked BBQ; I have used a fork, metal spatula, and there is not even a mark. It is a breeze to wash, whether I do it by hand, or throw it in the dishwasher. It has lived up to every non-stick promise. Time will tell all, but so far I could not be happier.

Treat it Right 4 Non-stick that Lasts, Larger Cooking Surface, No PTFE/PFAS
Update: I've used this pan now since the end of June pretty much daily. And I have to say it's the best investment I've ever made in a frying pan. Cooking in it is so easy, and my food, whether it's eggs, cheese or anything else just slides right out onto the plate. And clean up? What clean up? All I have to do is wipe it out or run it under the tap water. I'm also glad I bought it with the lid. Sometimes I'll just steam some veggies with a little water, and the lid insures they get cooked fast and easy. This is a wonderful kitchen product that saves me time and effort, and it turns out delicious tasting food! I was 'sold' at Costco when seeing the possiblilites of this non-stick frying pan. Salesman showed me avocado oil sprayed on, then an egg slipping out effortlessly. Also showed me a metal spatula scraping the bottom. Online I found out NOT to use a spray of any kind unless it's propelled by air, and NOT to use a metal spatula! I also read that the company was initially sued due to HTPE as the non-stick formula. But in 2024 it switched to ceramic, which has no PFAS. Also Costco only carries a complete set, but all I needed was a 10" pan. Fortunately, I found it on Amazon, and I love it! With good care it should last at least 5 years, provided I cook on med-low to low heat, clean it properly with a sponge, NOT put the hot pan in water, use the preferred low-smokepoint oils like avocado, use silicone spatulas, and hand wash. Ok, I know you're thinking that's a lot. But it's soooo worth it. What's to love? First and foremost, it is non-stick. All of my ceramic pans have lasted a year of less, then food was stuck like cement and no amount of scrubbing returned them to normal. To season Hexclad properly, follow these manufacturer's directions: "Heat your pan over medium-low heat for about 30 seconds. Pour 1 teaspoon of neutral oil (like vegetable, avocado, or olive oil) into the pan and swirl to coat. You can also use a paper towel to spread the oil all the way to the edges. Increase the heat to medium and continue to heat the pan for 1 to 2 minutes." The pan has some heft but it's not wrist-breaking. The sides heat up the same as the bottom, giving as much cooking surface as a 12" pan. The glass cover is well made and substantial, sealing in flavors if you use it for that purpose. Food cooks evenly without burning on the outside while undercooked inside. It doesn't rust or give a metallic taste to a meal like carbon steel does. It's not too heavy like iron. All in all I'm very happy with this purchase and highly recommend it.

The best frying pan ever made,… Almost
This is absolutely, by far the best frying pan I have ever used! Water doesn’t even stick to it. The handle is hollow and does not heat up very quickly. The stainless steel in the pan heats up rapidly and stays hot. The glass lid has a vent port to keep it from getting too hot, but does not detract from heating. Nothing sticks to this! The raised stainless steel prevents, scraping the nonstick portion and allows the use of any cooking utensil. It has a lifetime guarantee that I plan to utilize if it does not continue to perform. The only complaint that I have is that the pan is a little bit shallow. Bacon grease tends to go over the side as I am cooking.

The non-stick isn't lasting .
Definitely not worth the price. 3months in and eggs sticks to pan already. I can't see it lasting past 6-month before needing replacement. My 10inch cast iron preforms better and is 7 years old. Lthe design is nice and all and no chipping or scratches but the nonstick effect was gone after 1 months of eggs and just 1 steak. Nothing esle really cooked and i cook eggs on low obviously. Wait i did flash fry veggies for 2 weeks using avocado oil . But damn that's all . I'm sure better pots available for this pricepoint.

My Hexclad Non stick pan experience!
Soo disappointed with this Hexclad Stick everything frying pan ..I purchased this pan based on its non stick qualities and believing that this very expensive pan would deliver on all its advertised benefits! However I’ve been really disappointed with it and this morning was the final straw for me ! I’ve put up with it until now and given that I’ve had it for over 3 months … I’ve been patient! This morning a simple frying three eggs was a disaster! Tried turning them over to cook further and I had to scrape them off the pan !… I would appeal to customer service to return my money and leave it there ! I really had hoped paying soo much would deliver something different to MY experience…
