how many boston butts will it hold?

I fit 2 5lb pork butts, on a different occasion I smoked a full 10lb pork belly. As well as another occasion a 15lb Turkey. It is heavy when moving the grill around.

can you roast veggies?

I don't see why you can't. We love our grill and have made many things on it. Mostly meats tho.
