I use it every day to trim 15+ brisket.
I'm a pit master at a BBQ place and I've been using this knife for 3 months now. I trim brisket every day with this knife and I can trim 15+ brisket at a time without needing to sharpen it in between. I've had no problems with it, it's a good size, good quality, I have no problems with the cost, durable, doesn't dull easily, and has a good grip.

Flexible yet durable
This blade is SHARP right out of the box. Amazing steel that slices right through rib roasts, smoothly separates fats from meat, and is flexible enough that you could fillet fish with it. Must have for anyone that spends a lot of time in the kitchen.

Great knife
This is a fantastic and versatile knife. Very quickly takes a great edge on a honing steel, and has just the right amount of flex for boning out an animal quickly, and holding close to the bone for efficient work and minimal waste; while still being rigid enough for more aggressive work like breaking down joints. Definitely the one I would go for if you're going to be processing any large game animals, or even boning out cuts of meat purchased elsewhere. The rosewood handle has a nice classic look, and still provides a decent grip, even when wet or bloody. Even at twice the price, it'd still be a good value, IMHO.

Fantastic
Victorinox knives are great. First saw these on the Bearded Butcher Youtube channel as his preferred 6โ semi-stiff boning knife. So I bought this and understand exactly why. This is a great knife. Very beautiful and well built and extremely sharp. To get this for this price point is amazing.

Awesome knife!!
This butchering knife was an absolute game-changer! I had been struggling to process my first deer using my regular kitchen knife, which was just not up to the task. After stumbling upon this gem through YouTube videos, it was a complete lifesaver. What used to take me an hour for just one leg, I managed to breeze through the other three legs in the same amount of time. This knife made the butchering process incredibly efficient and enjoyable. It's truly amazing and has earned a permanent place in my hunting toolkit!

Great knife, but rosewood stinks
This is the perfect knife for general butchering. Just the right size and shape blade with just enough flex to the blade to make boning out meat easy. The steel holds a great edge, just hit it on a steel every so often as you go to keep it slicing. After using for a while, you will get moisture on the rosewood handle. And mine absolutely stinks when wet. This is a inherent function in the wood apparently, and some smell worse than others. People say it will eventually go away, but I'm not sure I can handle it until then. It's a very pretty wood, with natural oils in it so I paid a little extra instead of the plastic handle, but I think I'm going to go with plastic next time. In the meantime, I've seen a bunch of "remedies" to try to get the stink out or seal it in, I guess I'll try a couple.

This is an amazing boning knife.
I was using it for the first time to take apart a raw chicken. I was going slow, really paying attention to the cuts, and it was like a hot knife cutting butter. I moved my thumb into the breast by the keel bone) to pull back a bit more flesh and that's when I discovered that the chicken was still frozen in the middle. Jaw dropping performance by this knife. I couldn't even tell. The shape is perfect for getting around tight corners. It does take practice to adapt to something so sharp. I barely bumped my finger with the tip and was immediately bleeding from a painless cut. I did dig into bone a few times because the knife was trying to cut into it. These are issues that I'm thrilled to have. This is how a knife is supposed to work!
