It’s very easy to release the cakes after baking, and they’re the perfect size for individual portions. ### ⭐⭐⭐⭐⭐ LOVE THESE! WORKED PERFECTLY! *by P***C on November 22, 2022* I ordered two of these mini cheesecake pans and made two double batches of mini pumpkin cheesecakes for a teacher appreciation luncheon. I had read a lot of reviews for similar pans as well as the silicone ones. I'm so glad I went with these! I felt that spending a bit more for Nordic Ware was worth it and I wasn't wrong. I still gave a spray of non-stick cooking spray before filling, even though these have a non-stick coating. And they just worked perfectly! Interestingly enough though that although both are Nordic Ware and both came in identical boxes, but they were just slightly different. I noticed one was just slightly heavier than the other, and even the metal discs that come with them, one set was just slightly thinner than the other. So I'm guessing the company just slightly altered their manufacturing specs. I even weighed them out on a digital kitchen scale just for kicks, and one set weighs a little more. One of the sets also came with two extra discs, which is nice. But pans worked the same. And the mini cheesecakes slid out so easily. This might be an item that only gets rare use (because I don't often make mini cheesecakes) but it's nice to have a good product when you need it!! One tip I learned, is that to remove the cheesecakes after they've baked and set a bit, you can use a wooden muddler (the kind used for making cocktails) and it's the perfect diameter to push through the hole in the bottom, to push the cheesecakes up out of the pan. It's also ideal to use that muddler to tamp down your crust into the bottom before baking. I can't recommend these pans enough!
