How many sheets is this model?

Yes, this has two sheets of parts.

How many actual pieces are there ? Like 3? Or 50? I’d like something a bit challenging for my brother

There are about 90-100 since there are duplicate pieces for the aircraft and other smaller parts.

Are these metal sheets paintable?

They are stainless steel. Paint does not adhere to stainless steel well. Some models manufactured by Piececool and Microworld are different colors from the manufacturer and I'm not sure of the process they use. But why would you paint.

Can the elevators go up and down?

No. The model is static, nothing on the carrier moves, except the planes. Those loose and not physically attached to the carrier.
