The "air" valve use is quite confusing. One spot it's to adjust the air in the bag. Here in the questions, it's a water drain valve. Which is it?

It adds air as insulation within sheel of bag to keep the contents colder longer. Not a drain as bag is waterproof

How many cans can each size hold?

I bought the 20L. It holds a 12 pack with ice nicely. You could fit a few more but if you want it to be water and airtight, you need to have at least 3 folds before clipping. At first, I put all my drinks in first and ice on top. A better use is to put in some ice first and then layer drinks and ice...much easier to get them, especially if you have different flavors of drinks. Excellent product. I'm gonna buy the 30L, too.

What is the diameter on the inside of the bag?

Diameter is measured across the top of a cylinder, like how wide is the circular opening at the top. I believe you gave the height from top to bottom.
