How easy is it to resharpen, at an 8-12 degree angle?

I have owned mine for a little over a year. I use it a few times a year when smoking meat. I haven’t had to sharpen mine yet just roll the edge with a knife honing rod. I did buy a set of angle wedges that attach to the blade when using a stone for when it will have to be sharpened.

Is the 12" slicing knife good for smoked brisket?
