If I removed my phone with one hand will the charger lift off the table or stay stable?

If you lift your phone from the the bottom half up it will remain stable and does not move the stand at all. If you grab your phone where the circular magnetic area is you will probably lift the entire unit up together. The aluminum stand is fairly weighted and very stable though. I've been completely happy with it and it stays in place just fine for me. Hope that helps.

I have an aftermarket magsafe disk that's 61mm in diameter. Will that fit into this stand?

I just measured the Apple charger with calipers and it is 61 mm. It should fit.

Is it tilted enough to activate horizontal mode or standby mode at night?

Landscape mode is activated when the phone is placed horizontally on the charging stand. I don’t have iOS 17, so cannot say whether stand-by initiates, but I’d bet it would since the landscape mode kicks in.
