If you go immediately from hot to cold you will shock the enamel 3) when heating up, you do not need high temp setting. You can set ti medium or medium high then let the entire pan get to the same temp and adjust slightly from there. Remember cast iron retains heat very well once heated. 4) keep those plastic tabs that it come with so you can flip your lid upside down when you store it! Also love the artichaut green color.
