Terra Creta PDO Kolymvari is an extra virgin olive oil with a legally protected designation of origin — Kolymvari Chanion Kritis PDO. To carry this designation, the oil must be produced and processed entirely within the Kolymvari region of Chania, on the island of Crete, according to recognized and established methods. PDO (Protected Designation of Origin) is the European Union's strictest geographical quality mark for food products. It guarantees that every step — from the olive grove to the bottle — happens in one defined region, by producers following established traditions. Our PDO olive oil is made exclusively from Koroneiki olives, the small Greek variety cultivated in this region for over 3,000 years. The olives are cold-extracted at low temperatures in our mill in Kolymvari, preserving the polyphenols, antioxidants, and the fruity, slightly peppery aroma that defines authentic Greek EVOO. Use it for everyday cooking — roasting, sautéing, baking — and for finishing: drizzled over Greek salad, fresh tomatoes, feta, grilled fish, hummus, pasta, lentil soup, or warm bread.
