Is there a load bearing capacity for these shelves?

These shelves are suitable for items not more than 5lbs each. they can be used in the kitchen, a regular kitchen towel for the towel rack area. I hang all our glasses and shades on the towel rack and all vitamins, and first aid items are placed on the shelves, quite neat.

Can you use double stick velcro or other self stick products?

I wouldn't. It comes with the screws to give you good support, especially if you are going to put items that are heavy on the shelves. If you go back to the item on Amazon and scroll through the images on the left, the fifth image shows how to put the shelves together.
