How much is needed for a gallon of milk?

I had to use like 6 scoops for a gallon of milk and wait like 5 days to a week for it. Even then, the lactose in the milk isn't going to be completely gone - maybe 80% gone. If you want 0 lactose, you'll need to let it sit for a long, long amount of time or buy the lactose-free kind from the store. This is because you refridgerate the treated milk - this enzyme does not work as fast in lower temperature. If you leave it out at room temperature, milk will go bad pretty fast. I also noticed that the treated milk doesn't last as long in the fridge either.

What is the biological source of the enzyme?

The source of the lactase enzyme is a fungus (genus and species is Aspergillus oryzae, respectively).
