Is a 2 yr old too young for this? Thinking of my Grand daughter

Yes. This is appropriate for 5 and up. Some 4 year olds too. The pieces can be challenging to push together and keep in place and the connectors can be a hazard for small children.

Does it have any instructions to start some sample projects to stimulate a child?

My kits did not have step-by-step instructions, but they did include a card and pamphlet with images the child can look at and copy to make.

Can you pour water to show kids how water travel in pipe ?

The Straws are open like regular straws. just more rubbery, so water would pour through them, they are solid colors so you wouldn't see the water pouring through them but see the end result. We just used them for building different shapes.
