Can you use it while it is plugged in?

No, it needs to be fully charged.

Do u have to keep hold of the button? How long is the charge as lasting?? Thanks

Yes, you have to hold the button down for it to chop or pulse ie work, Charge - um? 3/4 times use then it needs charging. It's my 2nd one and so much more convenient than getting the food processor out.

Can it be used to mash potatoes

Cooked potato's maybe but if uncooked u must chop in small pices and more than one won't fit in at one time, this chopper it's very small
