Can either press the lever down (holding it down) or can flip it up (in the fully upright position it will actually stay up by itself).

Yes. It's best to clean it out after any beverage that may leave a residue behind.

I looked at many dispenser valves and most were the same size at the inlet, around 3/4 inch. The seals will cover a pretty wide opening even if valve does not seat well. This valve was 3Xs as costly as many but it is stainless steel and works really well. It's style is impressive and the wife wants another for a glass jar dispenser that has a low end plastic value now. I would be very surprised if it does not fit and work well for a standard ceramic crock.
