How is there no fiber in this vital wheat gluten so the net carbs are lower?

Because vital wheat gluten is just naturally low carb. Its just the gluten. Its like "water". It doesn't have carbs to begin with. It doesn't need a filler fiber to lower it's carbs. the down side is your own personal sensitivity. I wouldn't (and don't) eat it on a daily basis. Normally I made a loaf or crust for one or two meals, then maybe do the same thing again, in 2 weeks.

How much wheat gluten for a one pound whole grain bread loaf? I bake bread in a well seasoned cast iron loaf pan in a regular oven. Thanks.

The package says to use 1/2 T for every C of flour. My usual loaf of bread calls for about 3 C of flour, so I use 1 1/2 tablespoons per loaf.
