This is the best pan I have ever used. It's the first nonstick pan that actually worked the way it is supposed to - with food not sticking to its surface. It has great balance and yes, as an avid cook and fan of Food Network programming, I searched for this because I saw the blue pans on Chopped. My favorite pan, prior to this purchase, was a beautiful cast iron pan given to me as a present. I've had nonstick pans for everyday quick use for years, but always felt uneasy about using the chemical laden pans. So I bought the Calphalon pans because they claimed to not have Teflon but that turned out to be a lie as they have a very similar chemical. So when the study came out that both chemicals affected a child's immunizations, I grew concerned considering my wife and I hope to have kids some day. Plus the Calphalon pans are difficult to clean. As an avid cook, this pan heats up quickly and evenly. It caramelizes onions perfectly. It has great balance and good weight. When things appear to be making marks on the pan, rubbing with the spatula I'm using takes them off. If that doesn't work, when I'm done, I spray with a little oil or cooking spray and voila, it's gone with a swipe of the spatula. Clean up is amazing and works like the commercials for the nonstick pans that don't actually work like this one does. My wife and I are amazed at the quality. I had a suspicion they'd be great since I love my J.A. Henkels knives, but these exceeded my expectations.

I really love this pan and have it in 4 sizes, but other reviews were correct. Unless you nearly deep fry them in oil, eggs will stick. I wound up buying another pan just to cook eggs in.

While this is a heavy pan that distributes heat beautifully it is not a true non stick pan as advertised. We used an ample amount of Avacado Oil and these farm eggs were ruined by this pan. The pan does run hot. I contacted the Canadian Customer service but they simply claimed that he burner was too high. These eggs are not burnt by high heat and the extra oil in the pan followed the cooking instructions. I did not buy any this to deep fry my food, in fact the opposite. Would never support this company again.
