Can these be used to hold incense over coal?

That’s exactly what I use them for. The charcoal needs to be lit all (or most of) the way or it’ll kill oxygen supply.

Can this be used on wood burning stove?

Hi, I'm not sure what you mean on a wood burning stove as these are very small and mostly used in electronics.

Is this not a bit too thick (5 mil) to use for transistor mounting ?

yes this is too thick to wrap a wire, to the desired shape it will not bend
