A banneton is a type of basket, made of natural cane, which is used to provide structure for shaping loaves of bread during proofing. Banneton baskets are also known as Brotform or proofing baskets. It is normally used for doughs that are too soft or wet to maintain their shape while rising. These baskets are used both to provide the loaf with shape and to wick away moisture to form a skin, which creates a better crust. Our banneton comes with a cloth liner for the times you want a smooth crust. Use it without the liner to create a beautiful spiral pattern in the crust. Either way you choose to use the banneton, coat liberally with flour to prevent sticking. Bannetons become more non-stick with use as a small amount of flour accumulates in them. Our Banneton has been SGS tested and complies with EU/German food standards Our banneton also includes a Linen bag to help keep your bread fresh longer, as well as store your Brotform when not in use. Fabric provides the most hospitable environment for your freshly baked boules or other crusty loaves. Trapped moisture can destroy the crispy texture of the bread’s crust. Linen offers an environment that allows the dissipating moisture to exit, keeping the loaf better, for a longer time. This item is not for use in the oven.
