Can i fit this over an old round wall thermostat if i cut out the back plate?

The back plate is separate. I mounted mine without the backplate over a 3 by 3 inch (4 inch diagonal) thermostat. I have just under two and a half inches of depth in the box. If your round wall thermostat is the same size as the ones I grew up with, you will have no problem at all.

where would I be able to find replacement keys for this? We purchased several but need more keys due to many staff needing a key for use...

I bought two thermostat covers and uses the same key. Try to open all covers with one key. But if you need more replacement keys, ACE Hardware, Home Depot, and Lowe’s can replicate those keys.
