a kitchen favorite
This book was very helpful about how to dry many foods and explained the reasons for doing it a certain way. I found it extremely helpful in preparing dehydrated foods and was informative about rehydrating food as well. One of the best on dehydrating that I have seen.

Stands the test of time but shy on pix
I bought a 20-year old dehydrator and Deanna's book (publ. 1979) came with it. So why did I need another? Because it was so well-used that it was falling apart and no amount of tape could save it. Ironically, I read the reviews on her book and, based on them, I ordered it, not realizing I had the earlier version so it appears it is still a definitive guide on dehydrating. The info has been updated to reflect subtle changes in the last 30 years and now includes websites. The only thing missing are the dozens of colour pictures from the earlier version -- so I guess I'll be keeping it anyway.

Just a Bit Short
This book is a good reference for my general learning of dehydrating and the equipment involved. I felt it left me still asking a lot of questions and got almost as much info from the insert in the new dehydrator. Its good for a starter book, but I'm ready for intermediate level already.
