Some professionals will also agree, inspite what some may read from manufacturer. I use a 20* , wedge on a fine wet stone= pefect everytime on kitchen, boming and chefs knife. **Q: Is this knife okay to use in dishwasher?** A: All Victorinox Fibrox knives are perfectly safe to wash in the dishwasher. They won't "un-temper," they won't rust, they won't mysteriously get super dull, and if there's any damage (which you really have to concoct a scenario for, like setting a pot down on top of the blade edge), the steel is relatively soft so it'll be a bend rather than a chip. I toss them in the dishwasher when I feel like it, and wipe off any spots when I take them out. If you want these semi-soft steeled knives sharp on a daily basis, you'll need to get a strop or a good hone or even whetstone(s) and learn how to use it -- these knives take a good edge, but will also dull relatively quickly. The dishwasher doesn't dull them. Using them dulls them.
