Would the "Multipurpose Black" be the best to use to fill in gaps for exterior water faucets?

Yes, it will fill the gaps, but once exposed to sunlight it will eventually turn back to the orange/yellow color. Does not stay black when used outside.

It is water resistant. I would be careful using it in a camper that you don’t use too much since it expands and where you are using it

I must return a faulty foldable ebike. It is quite bulky. Can I use this to fill the whole cardboard box in which the bike came, to protect it?

Double wrap the E Bike in plastic. Make sure NONE of the E Bike is showing. Then it might work. If you get the foam on the E Bike you may have bought it, faulty or not. If it was me, I'd find another way!

Afterits cured is it soft or hard?

It’s hard, but more like packing foam. It can be cut or trimmed.
