what is co2 cartridges pressure is 850psi or 1000psi ??

CO2 pressurizes at about 850 PSI. This is not a constant. In colder weather, the pressure drops quite a bit lower which will give lower velocities from BB and pellet pistol. 850 PSI would be found north of 75 degrees fahrenheit .

Are these threaded? If not, can you point me in the right direction. I found an old ultraflate and it looks like I need a threaded cartridge.

No these ones are not, check these ones out http://www.amazon.com/Genuine-Innovations-G2153-Threaded-Cartridge/dp/B000660N1O/ref=sr_1_2?ie=UTF8&qid=1430087129&sr=8-2&keywords=ultraflate+co2+threaded

Will these work for the sig?

I have ordered these 5 times for my Sig MC. The last batch didn't work. The neck on the last order is shorter than the previous 4 and will not allow the cartridge to be punctured. I have included photos of the difference with my product review.
