I have a larger Char-Broil Grill.  The instructions say to heat the grill on high, then turn to lower temp to cook.  It works perfectly.  I turn the burners down to low and grill slowly.   Does smoke a bit but it's not dense smoke.  And the food is evenly cooked, not burned, perfect.  I am ordering a portable version for the RV.

Question 2

How hard is it to clean the infrared 'grate' -- I'm particularly concerned about the slots getting plugged up?...

I'd avoid 80/20 ground beef patties on this grill. Fattier burger patties tend to drop a little of the meat down into the V grooves and clog up the slots.  Also, if you're a solo griller like me, don't put down the meat in the same area each time, spread it around the other areas of the grill to keep from having to clean so often.

Do the legs and underneath of the grill get really hot? I am looking for a grill to take on a boat.

No the legs don't but the grill gets really hot!  I have an early model that  really heats up. The new ones may not be as hot but still will still be hot to the touch.  I plan to use mine on a boat but only cook on an Island. Always stay safe! It is a great great grill but I don't think I would cook with it on my boat. I have a Boat grill for that
