But if you only want to strain off the liquid, it is not that easy. You have to keep stirring the kefir in the strainer as it drains into a bowl. To make the kefir cheese, place the strainer over a large dish then just pour the kefir with the curds and whey into the strainer. Let it sit several hours, you don't have to stir it, although stirring it gently will speed up the process. The only thing that gave me trouble was a 4 cup Pyrex measuring cup. The strainer was a little too small for the rim and kept tilting in. I had to switch to a 2-cup measure for more stability. However, this is the best method I have found so far to make kefir cheese. I will have to add that there are many strains of milk kefir and even the environment in your home may affect the kefir.
