Are the peppers the mild, medium or hot ones?

Hello, the peppers are more on the mild side. People in Chicago like to let the pepper juice spill on the fries for flavor, so they’re not on the very hot side

What shelf life the sport peppers have?

Looks like about a year with what is stamped on the label
