Camellia is known as the best for a reason. Texas has an inexplicable grudge against dried cannellini beans, so I have to order them from Amazon like a savage. It’s baffling. These are normal, staple beans. Come on, H-E-B. Anyway, these are a decent price, are as “fresh” as fried beans can be, and they cook beautifully. I recommend an overnight soak in salted water before cooking, and adding a pinch of baking soda helps to soften the skin of the beans to make them creamier. Legend has it that this will also cause fewer farts. This legend has been busted, but the beans remain delicious.

I bought these three years ago, and I struggled to find a recipe in which to use them. They were hard to cook until tender even after soaking. Finally, last month, I decided to make them in a minestrone soup using my Smart pot. I soaked the beans overnight; drained the water; added them to my smart pot; added a tablespoon of vegetable Better Than Bouillon, two thinly sliced medium sized carrots, a large chopped onion, two 12-ounce cans of crushed tomatoes, four ribs of celery, one tablespoon of thyme, and one chopped potato. I then added water to the maximum allowed with that pot. I set the Smart pot to cook at high pressure for 45 minutes. Afterwards I salted the soup to taste. I ended up with the best soup I ever made. These beans will remain a staple in my pantry, hence, this most recent purchase.

The size and quality of tge beans were way better than store brands. I used one the bags of beans for Senate navy bean soup and even though i did not soak them overnight, the soup still finished early in my slow cooker.
