Is the stand supposed to fit flush on the back of the monitor or is the top slightly proud/raised? I can't fit mine flush.

My stand is adjustable. The top of the monitor and the top of the stand can be adjusted so they are at the same height ( flush). Does that answer the question?

Is the square plate that fits in to the back of the monitor supposed to fit flush? The square plastic at the top of the stand at the back..

Hope the video helps. I think you mean the big square in the centre of the back of the monitor, that is meant to be flush.

The delivery time for the product mentions 'January 10 - 11', is that really accurate?

Quite accurate. Also, since it'll be delivered in a massive box, the delivery drivers will likely try to deliver it to you as soon as possible.
