how long are the steak knives?

What are the differences between the cangshan series of knives (i.e. y1 series, n1series, s1 series etc)?

Apparently the main difference.between the series are the handles in each series are different. For example the N1 series the handle is metal and open and made solid with the blade. Others have traditional wood handles.

Does anyone know the difference between this series (n1 or s1) and the thomas keller series?

The S1 are full bolster knives available in X50CrMoV15 steel (Thyssen-Krupp 1.4116). The N1 series have a different handle with a slightly different blade shape without a bolster and are available in 1.4116 steel and Sandvik 14C28N steel which is a steel that has better edge retention but is a little bit more prone to chipping. The Thomas Keller series is Cangshan's flagship series and come in Rwl 34 steel which is a powder/particulate steel about the same as CPM 154...Its a very good steel. The Thomas Keller series also have different ergonomics that the other 2 series. All of them are good knives.

What are the handles made from?

A nice white hard imitation ivory. Knives are awesome, use them all the time. I like them better than out henkels
