German steel, cheaply made in China, what a joke
Its the second filet knife I really want to send back, but somehow I need one to work with. The blade is sharp and flexible, but the handle is bad quality, gaps between the wood and metal, also the wood is sanded too far down, so it's not smooth and kinda weird edges. No quality checks on amazon, only making profit, thats all. need to stop shopping on here

Laser or knife? Wow!
I bought this knife to compliment my new pellet grill. Seemed lots of recipes needed trimming or deboning, so I started looking around for just such a tool! Wow! This knife is super sharp and perfect for trimming fat or deboning any type of critter before slapping its carcass on the grill to smoke before chewing on it! Dont hesitate another second! Buy this metal version of a light saber now!

Beautiful and functional
I gave this knife as a present but was present when it was first used to remove the silverskin from a chateau briand. It seemed to work well. It has real heft to it and it is gorgeous. The perfect gift for this occasion.

Beautiful knife
The knife is beautiful, sharp and efficient. It's a stiff blade, so it's for certain purposes. I use stiff bladed fillet knives for carking tuna, filleting fish when I have to cut through rib bones and dicing fillets for fish tacos, cioppino, etc. To remove fillets from skin I use a flexible blade. If this company made a flex blade, I'd buy that too.

Great knife
I really like this knife. The only flaw I seen was that the small pins that hold the wood on, there was one that was not flush. I took a spoon and tapped it down.
