A: I have not used it for chocolate, only cheese. You make it as short or long as you like, I would guess.

**Q: How do you re-sharpen the blade or do you sell replacement blades?**
A: As far as we know, there are no replacement blades. To re-sharpen this knife, use the same method as you use for any other knife

This mechanism worked perfectly. The Tête de Moine cheese is absolutely delicious and putting the curled cheese on your cheese platter adds something very special.
