I use to buy the refrigerated spinach in plastic bags. No matter what brand I bought, the bagged spinach would always get soggy, mushy and wet. Sometimes even before its expiration date. I have always had some dried vegetables in my pantry as far back as I can remember—and i don’t really want to tell you how many years that has been! but a few years ago I decided to find out if you could make a soup from just dried vegetables and found out that it is entirely possible. I am ot talking abut a big chunky meat and vegettable soup or a hearty bean and ham soup or a thick creamy potato soup or any other soup you could actually eat with a fork. But I now regularly make a relatively thin but delicious soup which is useful to have any time of day or night even though never serves as a main course. I ordered this spinach to add to my modest soups and the container comes with a lot of spinach. Whiel I make up my measured dry ingredients and keep in separate continers and always have some available for cooking, i do not use a lot of the spinach in each contaienr as I am using a complement of other veggies and herbs etc. My spinach is keeping beautifully and I will likely order more hen I start to run out. So far I have not used more at a time either in a casserole or to use as a vegetable t a meal, I have no doubt that this wold also be possible. For ow I am happy wit the way I am using this fine product.
