What material are the pickup covers , knobs, etc made of?

The knobs are plastic, the single pickups have plastic covers and the humbucker has a metal cover but it sounds rubbish so you will need to replace it anyway. Had mine about 1 year and one of the pickups is not working anymore. I don't recommend this.

Would this fit a squire strat?

Yes it will… but, it will not be a perfect fit and you will most probably have to make some slight adjustments. Not all of the fixing screw-holes will line up (re-drilling required) and you may have to make some adjustments (filing) at the neck and bridge ends. Try to do the replacement with strings on so you can dry-fit and check alignment before fixing it in place. If you’re going to restring, also consider replacing the “gull wing” trees with rollers, install roller saddles and locking tuners. Others will have differing opinions, but it works well on my Squier Strat. There are some good tutorials on YouTube dealing with Squier mod’s. Hope this helps!

What colour are the pickups and switches? I cant tell if theyre nickle or more of a silver chrome?

Chrome coloured plastic except the humbucker which is metal.
